The Final Countdown

Yes. It has begun. I almost have an entire school year under my belt. It is really hard to believe that time has gone by so quickly.

In fact, this time last year, I still didn’t even know if I would HAVE a full-time teaching job for the 2010-2011 school year.  I did not get the call from my now principal until June 11.  Yes. I remember the exact date.  It was quite a memorable time for me.

I had been waiting for the phone call.. for weeks now. My demo lesson was in the first week of May – and was told I would hear in 3-4 weeks. Um. It was more then 4 weeks. AND once I hit the 4 week mark, I got super nervous.

But then – that night.. June 11.. I was standing in the kitchen in chatting with my mother.. and my phone rang. It was the school. “Omigod, Omigod, OMigod… it’s them, it’s them, it’s them..”

When I received my offer.. I was legit jumping up and down like a mad woman (landing a quietly as possible because I was still on the phone, of course)…

And as soon as I ended the call.. the waterworks began. It was SO emotional for me. It isn’t the best job market for teachers.. budgets being cut every year and what not.. Not too many schools are on the hunt for new hires.  It was a big deal.. (mind you Justin and I were in the middle of our house hunting… and the permanent second income.. meant SO much..)

I am pretty sure everyone in my family had tears in their eyes, too!  It was a very emotional and joyous occasion for all of us!

So – with that in mind – I want to soak up and ENJOY every last day of my FIRST YEAR.. because nothing will ever be quite like it..

You better believe I had those white capris out the day after Memorial Day!

I started off my day with the usual:

Overnight Oats with Berries…

I was then given an oh-so-lovely gift by one of my students this morning:

I mean.. how did she KNOW that I can get a little crazy when it comes to jelly beans.  To stop myself from eating an entire bag by Friday – I have decided that these will be jellybeans to share with the entire class ( me included.. I AM a part of the class after all…)

I also got back into one of my favorite snacks that has so many health benefits:

By recess time, I was seriously debating whether or not I should wait until like 6 or 7 to run.. since it was super hot and humid.. but ultimately, I decided I just needed to go as soon as I got home.

Since it was sunny and I need to protect my eyes and skin.. I sported a VISOR for the first time.


I liked how it kept the sun out of my eyes and I didn’t feel like I was squinting the entire time I ran..

However, upon returning home, I realized I was in such a frenzy about the visor.. I completely forgot to wash off my make-up. Hello Raccoon Eyes! Woops 🙂 !

  • Mile 1: 8:21
  • Mile 2: 8:19
  • Mile 3: 8:24
  • Mile 4: 8:15
Pretty happy with those splits.. while they may not be negative splits.. they are hovering all right around the same place.. showing consistency.  I have been getting so much better at NOT staring at my Garmin the entire race.. and just running at a pace that feels good!
On the menu for tonight.. WRAPS! Something easy.. and that doesn’t require much in the kitchen work.. because it is toasty in here.  We are trying to not use the A/C unless completely necessary.
So – tell me – if you are a big kid with a big kid job.. do you remember when you first heard you were hired?!  I’d love to here your story!

Still Baking For Boobies

Okay – so normally, I would NEVER do a repost.. but I feel soo strongly about fighting back against breast cancer – and I want to make sure ALL of my readers are aware of the BIG PLANS for my bake sale that is just around the corner!

After contemplating, I decided that posting this announcement.. and all the deets.. on a Saturday.. you know.. the Saturday of Memorial Day Weekend.. the unofficial kick-off  of summer (where most people are out and about enjoying the sun.. and not reading blogs) was probably not the best idea. (Fail on my part).

So – if you’ve already read this post.. I apologize for the duplicate..And also want to give a HUGE thank you to those of you who have already told me you were baking goodies.. and sent them to me in my inbox!!!

I have a confirmed 6 or 8 items.. and want this list to grow.. so I do hope you consider donating a baked good!  It may take an hour or two out of your busy schedule.. and I understand that schedules can be SOO busy!  But that 1 or 2 hours.. has to potential to make a huge impact in defeating not only breast cancer – but cancer in its entire entitiy.

One breakthrough – in any area of cancer.. has the potential to do some damage to all those nasty cancer cells.

Don’t Bake?  No time to bake? NO PROBLEM. Jenny from Fitness Health and Food has put together her own little goodie bag for one lucky bidder.  She has sent me her info already and let me tell you.. there are some pretty amazing items in this basket!  If you think a good basket.. or even just one special item.. would be easier for you to supply.. that is totally cool!  I will not turn away anyone! 🙂

Okay.. soo here are the deets for those of you who spent the weekend AWAY from the computer (you lucky ducks.. having someplace FUN to be 🙂 )


Official Annoucement of the Baking For Boobies bake sale!

On Monday, June 6, 2011, Beyond Bananas will be hosting it’s first ever BLOGGER BAKE SALE!

All proceeds will be donated to the Susan G. Komen Foundation.  To read more about this wonderful foundation, please click here.

More specifically, funds raised from this bake sale will be sponsering my team of 5 wonderful ladies who have committed themselves to walking 60 miles over 3 days in the Susan G. Komen 3-Day for a Cure.  Team Name: TROTTING FOR TATAS!  Check out our team.. here!

Breast Cancer is a terrible disease. It is alarming how many women (men.. too!) and their families are affected by this malicious disease!

So, now BB readers.. I am ASKING YOU for your help!  Here is how it is going to work:

If you are interested in provding something for the bake sale.. here is what you need to know!

  • You can donate ANYTHING! A baked good, a goodie basket with some of your favorite foodie (or non-foodie things..) ANYTHING that you can think of…
  • You DO NOT have to have a BLOG to donate!
  • Once you have decided that you DO indeed want to SUPPORT this FABULOUS CAUSE.. please submit the following information to my via email to by Friday, June 3, 2011:
    • The item you would like to donate with a brief description
    • A photo of your goods if possible (please, please, please try and make this possible!)
    • If it is something you have baked.. and you have a blogged recipe for it.. some linkage would be great
    • Where you would be willing to ship it to (US only.. Canada, international..)
    • Feel free to donate more then one item if you would like.. I would NEVER deny bake sale entries!
  • The bake sale will end on Wednesday, June 8 – and as soon as I receive confirmation of donation and a shipping address, I will provide you with the winning bidder’s information.
  • Ship goodies within 72 hours of receiving shipping information

For those of you who are looking to donate to the Susan G. Komen Foundation … and then receive some FREE baked (or otherwise) GOODNESS … here are the Rules and Logistics for Baking for Boobies! 🙂

  • Bidding will begin on Monday, June 6, 2011 at 7:00am EST. Items will be made available to you through a blog entry that will be posted at that time.  All items will have a MINIMUM starting bid of $15.00.
  • To make a bid, simply send me an email to and include the item you are bidding on AND the amount you wish to bid.
  • You can bid on as many items as you would like!
  • I will provide updates at the bottom of the bake sale post as often as possible to make you aware of the current high bidder. This way – you can raise your bid if you you would like.
  • The bake sale will end on Wednesday, June 8, 2011 at 11:59pm EST. Winning bidders will be notified on Thursday, June 9, 2011. 
  • The winning bidder will have 24 hours to make a donation to a specified member of Trotting for Tatas in the agreed upon amount.  A link to the donation page will be provided via email.
    • If the donation is not received within the 24 hour time period, the next highest bidder will automatically become the winner.
  • After the donation is confirmed and you have provided your shipping address, I will contact the provider of your item & they will ship your goods within 72 hours

When sitting in the sun.. and this many bead of sweat develop on your back.. after only 10 minutes..

I highly suggest you

Take a dip in the pool!

Clearly the rain clouds have cleared up and it has turned into QUITE a sunny day!

After reading in the sun and actually entering our pool for the first time ever.. Justin and I enjoyed some yummy turkey sloppy joes.. with steamed broccoli!

These are SO quick and easy to make.. and they taste yummy too. I will post the recipe later in the week!

Little side note:  Last time I cooked with a jalepeno.. I got the juices.. like engrained in my fingers. Honestly.. could not put my hands anywhere NEAR my face.. or else I would be on fire.  I itched my eye. OW. I itched my nose.. omg. It felt like my nasal passages were on fire.  Mom told me to wear gloves next time.

Shit. No gloves.  Ah-HA!… I knew I got my Bachelor’s and Master’s degree for something… I present you with.. my make shift gloves!

Plastic Bags are good for SO many things 🙂

Tomorrow.. it is back to work. SERIOUSLY.. that weekend went by WAY too fast..

But I am sure that the next 15 school days will fly by too!
