Tomato Lovin’

For some reason.. I have been on a TOMATO KICK for the past couple of weeks. I could probably live off tomatos.

Wait.

No, I could DEFINITELY NOT live off of just tomatoes.

Obviously I would need to throw in bananas.

Tomatoes and bananas.

Yes, that sounds about right.

But in all seriousness, the tomato fruit (yup.. fruit. fruits have seeds. tomatoes have seeds. tomato = fruit. Debate over) has so many benefits – it is a great addition to your diet for several reasons.

First off, let’s take a gander at all of the nutrition that is packed into this little, red, juicy piece of goodness:

In addition to all of these nutrients and vitamins.. that are sure to do a body good…tomatoes provide

  • Lycopene – a hot topic area of research that has been said to have preventative cancer properties, having shown preventative properties in humans against cancers such as colorectal, lung, breast, pancreatic, prostate, and endometrial
  • Overall promotion of prostate health
  • Antioxidant Protection
  • Heart Protection. As a great source of potassium, niacin, vitamin B6, and folate, tomatoes can help to lower your risk of heart disease throw lowering cholesterol.
  • Reduction of blood clotting tendencies through tomato juices.
  • It is a natural anti-inflammitory 
  • Helps to maintain bone health through Vitamin K

Is that what you are looking for?  Well, I would be happy to provide you with a meal I have been diggin’ lately! (You will come to learn that I am ALL about stir fry!) 

Sun-dried Tomato & Zucchini Stir-Fry

Serves a Justin and a Cait

Ingredients 

  • Chicken (however much you would use to serve your party.. we used 1 large chicken breast)
  • 3 tbsp balsamic vinaigrette
  • 1 tbsp honey
  • 1/2 zucchini, quartered
  • Handful. cherry tomatoes, whole (Justin doesn’t like tomatoes that much.. not these anyway.. so I ate all of them 😉 )
  • 7 sun-dried tomatoes, chopped
  • 1 tsp pepper
  • 1/2 c. quinoa
  • 1 c. water
First – I always get my Quinoa cooking so it has ample time to fully cook. To do this, simply combine 1/2 c. quinoa, 1 c. water, and 1 tbsp balsamic vinaigrette in a small sauce pan.  Bring contents to a boil. After about 2 min at a boil. reduce heat to simmer and cover.  I usually let mine sit, covered, simmering.. until the rest of my meal is complete.

Okay – back to the main event.

  • Get your veggies chopped like I had previously mentioned:

  • After washing chicken, cut into bite size pieces. In a small bowl, combine chicken, 1 tbsp balsamic, 1/2 tsp honey, and 1 tsp pepper.
  • Spray a pan with non-stick spray and add chicken.  Cook about 2 min each side, until no longer pink inside.  Remove chicken from pan and set to side.
  • Add remaining tbsp balsamic, 1/2 tbsp honey to pan.  Add zucchini and sun-dried tomatoes.  Cook for 3-4 minutes, until zucchini softens.

  • Add cherry tomatoes to the mix. Cook for another 2 minutes.

  • Return chicken to pan – cook until all is heated.

Serve over the cooked Quinoa!

  1. I love the big, dark red beefsteak tomatoes that you can find in the summer. My favorite way to eat them is in a caprese salad with good mozzerella, basil, olive oil and balsamic.

    I do not like tomatoes… but I like things made with tomatoes. ahahah I’m crazy I know. I think my have produce lately is zuchini and green beans!

  4. Sundried are the best kind – yum! I have diced ones from a can though in my lunch bowl this week. I paired them with spinach so the vitamin C from the tomatoes would help me absorb the iron.

  5. I love tomatoes but they’re not in season here yet. I couldn’t resist buying them at the farmer’s market a few weeks ago and they were SO mealy and gross… but when they are in season I can’t get enough! Lately I’ve been really digging asparagus!

  6. The only way I can eat tomatoes is if they are cooked. Otherwise they make me gag.

    When I was a kid my Grandma used to grow tomatoes; We would go over to her house and have picnics in the back yard and I remember one time she made all of us (my cousins and me) eat little tomatoes.. SOOOOO GROSS!!!! Uhm, and the majority of do not eat tomatoes to this day (ha ha).

    My fave veggie right now is zucchini. I’ve been on a zucchini kick a while now. I’m also digging green peppers, only cooked though. Can’t eat them raw.

    • Yikes. I don’t think I would like tomatoes if I were forced to eat em either. They are definitely one of the foods that I have developed a taste for. Hated em as a kid!

  8. I love grape tomatoes…& I’ve recently discovered a love of sundried tomatoes too! For some reason, I used to shy away from them. I didn’t know what I was missing out on!

  9. I’m not a huge fan of tomatoes by themselves, but when combined in a recipe I think they are great!

    This stir-fry looks ahhhmazing. I just bought a big bag of quinoa so maybe I’ll be able to make this sometime soon! (minus the chicken!)

  10. i usually don’t like raw tomatoes (unless it’s summer & their heirloom) but i LOVE salsa, marinara sauce, tomato paste (slathered on bread, broiled, & topped w/ a runny egg), & sundried tomatoes (thrown into my turkey meatloaf!). one thing i hate: ketchup. i’ll eat pretty much anything, but i cannot even stand the smell of ketchup! 🙂

  11. I’m not a tomato fan at all! I’ll eat tomato sauce and salsa, but raw tomatoes- ewwwww! I am loving fresh peaches lately- that’s my favorite summer fruit at the moment!

  12. I do like tomatoes – I prefer grapes/cherry tomatoes ’cause they’re easy to snack on!

    I’m lovin’ avocado and apples!
