Happy Hump Day!

It’s my favorite time of week.. where Jenn helps us all out by throwing a little link party – called What I Ate Wednesday.

I have been insanely busy this week – so I provide you with some recent eats.  Not what I ate on Wednesday.. and not even all of what I ate on Tuesday. But – it has been what I have eaten in the past couple of days! 🙂

A amazing lunch I had recently – was a Turkey Bacon BLT.  I used a couple of slices of Turkey Bacon – with some lettuce.. and tomato (Duh.. hence the BLT) and two slices of Whole Wheat Ezekiel Bread.  On the side – I have some yummy cottage cheese – with heated apple chunks and peanut butter.  It was a delicious mixuture.

I’ve been loving my fresh veggies lately – so snacks have been anything from raw zucchini to carrots to sliced red peppers. And then some!

And this dinner. OMG. It was DELICIOUS. I will be providing you with the foodgasmic recipe on Foodie Friday – but here is a little preview of the goodness that I like to call Caribbean Jerk Turkey Burgers with Homemade Mango Salsa.

Gah. Delicious. I can’t wait to make these again. I really enjoyed my experience with the homemade salsa.. and will totally be trying different mixtures in the future!

And of course.. I have been chomping on these healthy blueberry oat bran muffins that I made this weekend!!

  2. I can’t wait for that jerk burger recipe!

    Best thing lately… I feel lame saying “oatmeal” but that zucchini oatmeal I made the other day was awesome. Idid it again with blueberries, walnuts, nutmeg and a little almond extract and it was just as scrumptious.

  5. Something about the words mango salsa always makes me go YUM and FANCY! Sounds so good!

    The best thing I’ve had lately is the 1/2 a bagel I had as part of breakfast 🙂

  6. A jerk burger…yum! Can’t wait for that one.
    This does not sound good at all, but I was totally craving it and loved it yesterday. An egg salad sandwich with bacon and arugula on whole wheat. Delicious!

  7. I love jerk seasoning! I’m excited for the recipe. The best thing I’ve eaten lately is a giant and super flavorful sweet potato. Love those things!

  8. BLT’s!! Where have they been in my life? Somehow I’d completely forgotten about this humble, yet amazingly delicious sandwich! When I was little, I was the five-year-old who ordered BLT’s at diners instead of grilled cheese.

    Looking forward to the Carribean Jerk Turkey Burger recipe!

  9. Oooh wow, I love the idea of mango salsa! I’m going to try that definitely – I have three mangoes waiting to be used!!
    Best thing I ate recently would be cinnamon puffins!! We don’t get them here in the UK and can only order them which is soo expensive but they are SO worth it. I am in LOVE with puffins!! I so wish we had them here 😦

  10. Hmmm I made a huge pot of black beans with cilantro, onion, and garlic, and they turned out amazing! I’ve been eating them all week and loving them!

  11. I have been in love with the breakfast cookie lately and anything that can be grilled! I LOVE summer foods!!

  13. I’m sure the African Peanut Stew that I was TRYING to make today would have been the best thing ever… booo for burnt peanuts! Your jerk turkey burger looks great!

  14. That burger with mango salsa looks so good! I’ve been carrot ginger soup recently, feels so healthy but still has taste (or maybe I’ve just needed veggies…)

    I wish that I could say that I’ve been doing lots of new cooking but I’ve been eating a lots of green veg and that’s good enough for me 🙂
