WIA — In San Francisco

Happy Wednesday! Hump day for all of you that are working (and for those who aren’t.. like me.. you probably don’t even know what day it is 😉 )

There is no way I wanted to miss WIAW by Jenn – so I’ve compiled some of my eats while I’ve been out here in Cali!!

So – going away on vacation for me – does not meet giving up my healthy habits.  I try to keep myself eating healthy – even while away and even if I have to eat out for many of my meals.

So – how do I stay healthy?!  Well, the first thing that I did when we got to San Fran… was hit a up a local little market to pick up some essentials.

I knew that our room had a fridge.. and that there was a microwave available for use – so I could have Organic Instant Oats w/ a sliced banana and the protein powder that I brought from home for breakfast…

I had this oat mixture (here with Strawberries that I picked up at the Farmer’s Market..) for most breakfasts.. while Justin hit up Starbucks for bagels.

I also picked up some carrots – and some goldfish for snacking.  Additionally, I had the chocolate cherry snacks, some (luna, clif, bora) bars, and a supply of apples as well.

Here are a few of my eats from when we have been out!

Yes, this is recycled.. sorry. They were just that good!

Steel Cut Oats made with water.. topped with fresh fruit (and I added Sun Warrior 😉 )

A turkey sandwich on whole wheat bread with lettuce and tomato from Working Girl’s Cafe

AMAZING Hummus Platter – Sun-dried Tomato Hummus, Kalamata Olive Hummus, and Traditional Hummus with cucumbers and flat bread for dipping:

Plain Grilled Veggies with Brown Rice – and a Balsamic Glaze Dipping Sauce on the side.. (Both of the above mentioned dishes were from Daily Grill )

Self-Serve Frozen Yogurt from Ice Bee … on multiple occasions..

They may look the same.. but that is ONLY because it tasted SO good, I got the same thing both times! 🙂

This is .. of course.. no where near ALL that I have eaten while in San Fran.. but I am not one to picture all of my meals!!

I do induldge as well.. don’t you worry! I just want to make sure that I keep myself energized and feeling like myself through the whole trip!

What do you do to keep your healthy life-style while on vacation!?

Full of Surprises..

As I mentioned in my brief recap of Picnic in the Park – my school’s version of field day… I came home last night to spend some time with the family.  And they had many surprises awaiting when I arrived home.

First off – my brother decided he was going to smoke some chicken. He loves using his smoker – and has smoked brisket for almost 24 hours in the past – but decided to do a chicken last night for his lovely sister – since that is the only meat she eats 🙂

He sets up shop w/ a lawn chair!

He smoked to whole chickens – and check out the little toy he has to “inject” flavor into the meat!

I asked him if I could use it for at home bo-tox parties…

So – the lovely chickens were seasoned inside..and out.  On the outside, he rubbed salt, pepper, and brown sugar.

(Sorry to all you non-meat eaters out there!!)

The meat itself was wonderfully moist and absolutely delicious!  Some of Michael’s future smoker projects include SMOKED MOZZARELLA! and doing some sort of smoking with pork. where he is going to use the injector thing to inject apple juice.

After dinner was done – my whole family presented me with a lovely little gift to celebrate the compleition of my first year of teaching! (one week early)

A KINDLE! Gah! I am so excited. I have been wanting an e-reader for the longest time (I am actually the only one in my family that doesn’t have one.. so now I no longer feel left out!) This will be awesome for the summer .. for my trip to San Fran. For everything.

Now, I just have to decide what book I want to download! 🙂

More surprises.. but of course! It seems as if my father has taken a liking to Trader Joe’s and all of there yummy foods.  Check out what he got:

This stuff.. was delicious! It is made with edamame – not chick peas.. and it tastes a lot of guac. I am head over heels in love with this stuff! Last night, I enjoyed it on some pretzel thins.. but will totally be picking this up at my local TJs and using it on.. um.. EVERYTHING.

And then there were these!  (I swear that these were almost gone before I got home!)

These are dangerous. Even if it were full.. it would have probably looked like this by the end of the night!!

And take a looksie at this:

Thats right.. the cinnamon ezekiel bread that I have been wanting to try forever. My mom got to it before I did – so it seems.

Okay – it doesn’t just seem that way. It is that way. And I knew it too. She told me at the beginning of the week.

I wanted some with my breakfast – so I DIDN’T HAVE OVERNIGHT OATS/OATS OF ANY TYPE TODAY.

Say What?!

Yup – you heard it hear first. NO oats 🙂

Instead, I had this lovely spread!

A little french toast action – dipped 2 slices of the bread in a beaten egg/lil bit of milk.. accompanied by a banana and peanut butter! 🙂

Now that I am fueled up and ready to go – momma and I are off to the mall to get some make up, search for a new jacket to bring on vacation, and take care of my beastly eye-brows.

Then .. I get to go visit the ever-so-lovely dentist.  I don’t mind the dentist. I just don’t usually walk out smiling. I have soft teeth with deep grooves. So.. I usually walk out with another appointment card to have a cavity filled. 😦

So – heres to hoping that the dentist has another pleasant surprise for me.. and I leave his office without another appointment card!

Do you have an e-reader? If so, which one?  Do you feel as if you read more since you’ve started using it?!

Longest Outdoor Run to Date!

Um. It is Sunday. BUT I am calling it SATURDAY.. because there is NO WORK on Monday.  HOLLER MEMORIAL DAY! 🙂

But let’s not forget to take some extra moments and honor those men and women who have SO bravely given their lives so we can enjoy all of the freedoms that we have today..

Before we move on.. I have one quick favor to ask of you..

LIKE ME ON FACEBOOK! I created my own page 🙂

I know you are all out and about and enjoying the beautiful weather in the unoffical kick off of summer – but I thought I’d pop in and share the exciting events of yesterday. (okay.. they aren’t exciting.. but sharing … the average happenings in the life of Cait.. just didn’t sound quite as nice!)

The heat and humidity of southwestern CT have ARRIVED.. so I planned to get up early (no big deal for this early riser) and knock out a run shortly thereafter.

No alarm – but everything went as planned…

6:00 wake up.

6:30 Pre-run Snack

1/2 a Banana & Peanut Butter

7:15 (need to digest) and I was out the door.

I heard Justin rummaging in the bedroom – but wasn’t sure if he was REALLY awake, so I set out for my run on an overcast morning (roughly 65*.. perfect running weather).

I like running early.  I ran some of my ANGRY RUNNER route… but was not an angry runner today. Nope.. I was a happy runner.. because people were actually giving me my space.. seeing me.. and letting me run! WAHOO!

I had no set plan for how far I was going to run today. In fact, I kept changing it up in my head. I was planning out the future turns I would take.. figuring out how long that might be.  FIrst I decided on running for an hour.. so about 7 miles. Okay.. let’s go with that.

After I finished my 4th mile..and was on my way to #5… I saw a blue shirt about 75 yards ahead of me.. just turning off of another street.  It was none other then.. JUSTIN!

But he was 75 yards away. And I was already 4 miles into my run.  He is not slow.. running between 8:00 and 8:45 min/miles. I wanted to catch him so bad..I was so happy to see him and have an opportunity to (scare) say hello to him!

There were times when I doubted my ability to catch up to him.. I probably said.. it wasn’t possible 4 or 5 times in a short 5 minutes span.  But.. I CAUGHT HIM!  And I scared him shitless too! He though I was going to jump him.. he claims!

He told me he’d run with me.. but I said I had 3 or 4 miles left..and he said.. c-ya later! 🙂

So – an hour came.. and I though.. ehhh I can do 8 miles.. and that it JUST what I did.  I ran 8 miles and finished with a time of 1:08:10. YES!

Mile Breakdown:

  • Mile 1: 8:40
  • Mile 2: 8:29
  • Mile 3: 8:36
  • Mile 4: 8:32
  • Mile 5: 8:08 … Must. Catch. Justin.
  • Mile 6: 8:37
  • Mile 7: 8:41
  • Mile 8: 8:22
  • Average: 8:31/mi

I am happy with this breakdown for the most part.  8 miles is the longest I have ever run outdoors.. (I’ve never brought you to the days where I would run 10 miles on a treadmill) .. and the longest I have ever run without stopping.

Sorry if I seem really narcissistic today.. I am just really proud of myself!

My stomach was a rock when I got home (8:45am after walking for a while and stretching) .. and I couldn’t eat the oats I had prepped prior to my run for a while.

Instead, I showered and was lazy on the couch wishing the clouds would disappear.

My hunger finally came back with a vengeance at around 10:15 – and I ate this yummy bowl. (Nothing different from the norm..)

Since it was still cloudy.. Justin and headed to the mall.  He people watched.. while I shopped. Here is a little taste of what I got:

Came back, whipped up a super quick, super late lunch (it was 2:00!!) and headed down to the pool.. because the SUN CAME OUT!!!

Sadly, it came out almost immediately after we arrived at the mall.. but we have plenty of time to enjoy the sun for the rest of the weekend..and I had a need to SHOP!

Another one of these for dinner:

And then a night on the couch watching this:

Funny.. for sure. But nothing like Meet the Parents or Meet the Fockers..

Now, I am off to bootcamp and then to a Memorial Day Picnic!

Made a batch of these yummy delights to bring along with me!

What are YOU doing today!
