WIA — In San Francisco

Happy Wednesday! Hump day for all of you that are working (and for those who aren’t.. like me.. you probably don’t even know what day it is 😉 )

There is no way I wanted to miss WIAW by Jenn – so I’ve compiled some of my eats while I’ve been out here in Cali!!

So – going away on vacation for me – does not meet giving up my healthy habits.  I try to keep myself eating healthy – even while away and even if I have to eat out for many of my meals.

So – how do I stay healthy?!  Well, the first thing that I did when we got to San Fran… was hit a up a local little market to pick up some essentials.

I knew that our room had a fridge.. and that there was a microwave available for use – so I could have Organic Instant Oats w/ a sliced banana and the protein powder that I brought from home for breakfast…

I had this oat mixture (here with Strawberries that I picked up at the Farmer’s Market..) for most breakfasts.. while Justin hit up Starbucks for bagels.

I also picked up some carrots – and some goldfish for snacking.  Additionally, I had the chocolate cherry snacks, some (luna, clif, bora) bars, and a supply of apples as well.

Here are a few of my eats from when we have been out!

Steel Cut Oats made with water.. topped with fresh fruit (and I added Sun Warrior 😉 )

A turkey sandwich on whole wheat bread with lettuce and tomato from Working Girl’s Cafe

AMAZING Hummus Platter – Sun-dried Tomato Hummus, Kalamata Olive Hummus, and Traditional Hummus with cucumbers and flat bread for dipping:

Plain Grilled Veggies with Brown Rice – and a Balsamic Glaze Dipping Sauce on the side.. (Both of the above mentioned dishes were from Daily Grill )

Self-Serve Frozen Yogurt from Ice Bee … on multiple occasions..

They may look the same.. but that is ONLY because it tasted SO good, I got the same thing both times! 🙂

This is .. of course.. no where near ALL that I have eaten while in San Fran.. but I am not one to picture all of my meals!!

I do induldge as well.. don’t you worry! I just want to make sure that I keep myself energized and feeling like myself through the whole trip!

WIAW – Recent Eats

Happy Hump Day!

It’s my favorite time of week.. where Jenn helps us all out by throwing a little link party – called What I Ate Wednesday.

I have been insanely busy this week – so I provide you with some recent eats.  Not what I ate on Wednesday.. and not even all of what I ate on Tuesday. But – it has been what I have eaten in the past couple of days! 🙂

A amazing lunch I had recently – was a Turkey Bacon BLT.  I used a couple of slices of Turkey Bacon – with some lettuce.. and tomato (Duh.. hence the BLT) and two slices of Whole Wheat Ezekiel Bread.  On the side – I have some yummy cottage cheese – with heated apple chunks and peanut butter.  It was a delicious mixuture.

I’ve been loving my fresh veggies lately – so snacks have been anything from raw zucchini to carrots to sliced red peppers. And then some!

And this dinner. OMG. It was DELICIOUS. I will be providing you with the foodgasmic recipe on Foodie Friday – but here is a little preview of the goodness that I like to call Caribbean Jerk Turkey Burgers with Homemade Mango Salsa.

Gah. Delicious. I can’t wait to make these again. I really enjoyed my experience with the homemade salsa.. and will totally be trying different mixtures in the future!

And of course.. I have been chomping on these healthy blueberry oat bran muffins that I made this weekend!!

Last WIAW of the School Year

Wahoo! This is my last What I Ate Wednesday of the school year.

Well, technically speaking. I mean.. I have a half day next Wednesday… but have days don’t count in my mind. Because in my school.. it is LEGIT 1/2 of a day. We normally get out at 3:45 .. and on half days, we get out at 11;45. Um.. thats 4 hours. THATS AWESOME.

When I was in school.. half days.. meant we got ot like an hour early.. or 9o minutes early. NEVER 4 HOURS!

Once again.. a big SHOUT OUT TO JENN for making What I Ate Wednesday possible.. and allowing all of us foodies to gawk at the marvelous creations made by all! 🙂  Go on over and see what everyone else is eating today!

Breakfast

Shocker! Overnight Oats. Seriously.. the day you come to a WIAW.. or any other day for that matter.. and find that I ate something other then oats for breakfast.. well.. that day will be quite special.  These chilled oats are just too good to not have every day! 🙂

Lunch

Lunch.. was an experiment. See, we don’t have a grill yet. But I love grilled vegetables.. and we DO have a forman. Insert experment.

Let’s try to grill zucchini on the Forman.

Results: ehh. not too shabby.. but would NEVER be confused with REAL grilled veggies.

Sandwich: “Grilled” Zucchini, Turkey, Mozzerella Cheese, & Mustard on Ezekiel Bread. Raw Sugar Snap Peas (YUM).  Vanilla Yogurt with LOVE GROWN FOODS Raisin Almond Crunch Granola (Awesome Giveaway win)

Snack:

This is going to be a new favorite. You take a tortilla, shredded mozzerella cheese, and a jam of some sort (I use Trader Joe’s Apple Cranberry Butter).  Fold said tortilla in half. Cheese on one side, jam on the other.

Fold clothes. Microwave for 20 seconds.

Heaven.

Dinner:

Lemon & Thyme Marinated Chicken with Steam Snap Peas, Zucchini, Red Pepper & Green Pepper.. on a bed of quinoa.

YUM! The lemon chicken MADE this dish. Marinated it in only lemon juice and thyme for a couple hours.. and YUM. This was all Justin’s doing btw 🙂
